Carnival Chocolate Cake

Ingredients:

Block of butter
1 ½ cups milk
cup sugar
vanilla sugar
Milk powder
4 tablespoons cocoa
3 packs of biscuits
½ cup raisins
½ cup flaked almonds
½ cup chopped nuts

Method:

Boil butter and ½ cup of milk with sugar and vanilla sugar. Pour the milk powder, sifted through a sieve and cocoa. Mix thoroughly. Add the broken biscuits and sweetmeats. Mix thoroughly. Grease oblong cake mold. Pass the mixture into roasting. When completely przestygnie put in the fridge. After cooling, the block cut into slices and arrange on a platter. Block chocolate is best prepared the day before and leave it on overnight in the refrigerator to get the proper consistency.

Polish Herring Salad (traditional Christmas recipe)

Sauce:
3 tablespoons honey mustard (or other mild mustard)
2 tablespoons liquid honey, preferably multiflorous
2 tablespoons oil
3 tablespoons vinegar made of plums
1.5 tablespoons of spice to gingerbread
Mix all ingredients together and refrigerate until you've finished preparingthe second part of the food.

Fish:
5 fillets of Matias
10 pickled plums
1.5 marinated pears
3 tablespoons pickled pearl onions
2 tablespoons pickled gherkins small

Soak herring for 3 hours in cold water, which must be changed once per hour. Then drain and cut into strips about 2 cm. Pour the sauce and leave for 7 hours in a cool place. Add chopped fruit and vegetables and mix all together.

Salmon Fishcakes

A lovely and simple recipe for Christmas!

Ingredients:

50 grams of salmon fillet
fish seasoning
half a lemon
8 slices of toast
bunch of dill or parsley
2 cloves of garlic
15 grams grated cheese
4 tablespoons of oil

Method:

Cut fish into pieces for one portion. Grease the aluminum foil with oil, arrange the fish pieces on it, sprinkle with lemon and seasoning. Let stand for 30 minutes. Cut toast into small cubes and mix with cheese, chopped dill, garlic and a spoon of oil. Ground the fish, mix with the other ingredients and put in the preheated oven (190°C). Bake for 20 minutes. Serve with bread.

Swedish recepies

Currently I'm in dear need of Swedish. And it must not be meatballs:) I'm preparing a special menu for my friends whom I travelled to Swededn with many years ago, so I want to surprise them and bring back the memories. But it needs to be something really special. I've been looking thoughout the Intenet and there are plenty of great recepies to choose from (I found this archive of Swedish websites helpful). I'm so excitied for the next weekend when we're having the reunion!

Chocolate Chip Cookies Recipe

Ingredients:

1 scoop sugar
1 package chocolate pudding
2 teaspoons of maple syrup
2 bananas
2 eggs
2 packages of chocolate chips
Some peanuts

How to make it:
Stir the sugar, chocolate pudding and maple syrup in a bowl. Add the bananas, eggs, chocolate chips and peanuts. Bake in oven for 1 minute.

Facebook Cooking Pages

I often look for new recepie ideas on Facebook, its a great resource! So many restaurants and chefs post their menus, that you can often find real culinary gems! I recently started looking for various regional specialties, especially the ones from Central - Eastern Europe (they have some great Christmas recipies!). I found a website that ranks regional Facebook Pages called FanPageRanking.com. In my search for regioanl recepie Facebook Pages I found exactly what I was looking for, that is pages from Poland, The Czech Republic and Slovakia. Of course FanPageRanking is not only about Facebook pages dedicated to cooking, but still a useful resource!

Ideas from a new cookbook

I'm testing a new cookbook, so tonight the 2nd recipe. Yesterday I made a chicken pie and it got the thumbs up. Tonight Italian sausage pasta with a bit of chilli this got thumbs up from me but the girls found it too spicy. I do love spicy food, but I understand that it's not for everyone. Some say that spicy food is not good for your complexion either, like chocolate for instance. Well, I never noticed that! I would love to try a variation of this recipe with Chorizo, wonder what the girls would say about that! I'll try to make it less spicy this time, maybe add some more cream too. and tomorrow its time for a very special Spaghetti Carbonara (only not with ham but with salmon!).

Christmas Recipes

I'm going to start making my Gingerbread Biscuits this week! I'll be presenting them at Christmas Fairs over the next few weeks! I'm also experimenting with winter fruit cupcakes recipes, I'm hoping to surprise my guests this Christmas! This must be the most exciting time of the year for every chef!

Gluten-free shortbread?

I've been working on a gluten-free shortbread recipe and, so far, I'm not impressed. Scottish shortbread is one of my favorite sweets, I always get a few boxes when I travel to Scotland and I aslo make them myslef when I run out.

Tomorrow a friend of mine, who is gluten-intollerant, is coming over and staying for a few days. So I;m wondering how to create this specialty for her. I would really love to bake one of my signature dishes for her as I haven't seen her in years!

Moong Dal

Preparation & Cooking Time: 45 minutes
Servings : 2 people

Ingredients

1 cup of Moong Dal / Whole Green Gram (available at most Indian stores)
Salt to Taste
1 tablespoon Vegetable Oil / Clarified Butter / Ghee
1 teaspoon of Mustard seeds
1 teaspoon of Cumin Seeds / Jeera
1 teaspoon of Ginger paste
1/2 a teaspoon of Garam Masala
1/2 a teaspoon of Black Peppercorn powder
1/2 a teaspoon of Red Chilli powder
1/2 a teaspoon of Turmeric / Haldi
1/2 a teaspoon of Asafoetida
1 teaspoon of Coriander / Cilantro powder
1 tablespoon of chopped Coriander / Cilantro leaves
2 Green Chillies, chopped

Method

Wash the dal / green gram thoroughly. Add 1 & 1/2 cups of water and 1/2 a teaspoon of turmeric / haldi. Pressure cook the dal / green gram for 3 whistles. A rice cooker can also do the job, in case you don't have a pressure cooker. Let the dal / green gram cool down for a while, once it's done. The dal / green gram should be soft when done. Heat a saucepot / deep dish to medium heat. Add the vegetable oil / clarified butter or ghee depending on your choice. Then add the asafoetida, mustard seeds, cumin seeds, chopped green chillies and stir fry for a minute or so till the mustard seeds stops to splutter. Add the ginger paste, red chilli powder, coriander / cilantro powder, garam masala powder and saute for a minute. Add the cooked dal / green gram along with the remaining water from the cooker to the saucepot. Mix well. Add another cup of water and bring it to a boil. Sprinkle some black peppercorn powder. Once done, add salt to taste. Add a tablespoon of butter / ghee. Garnish with coriander / cilantro leaves and serve hot with roti / naan / chapathis or with steaming rice.

Cake Pops

I was recently introduced to cake pops at a family function... I found a recipe and am going to try it out using spice cake with cream cheese frosting and decorate with fall colored sprinkles...this may just be the answer to all my upcoming harvest time events!
